Everything depends on budget you are expecting to spend on this matter.
As for now Oreanda htl consider to be the best at souther coast of the Crimea(it has ****), next goes Palmira Palace(****) but they are all not the reasonable ones. Bristol hotel (***) has more reasonable prices it is a business class hotel. There are also small private hotels which I think are good for booking. And the less expensive option is private appartment rent, it could be Oreanda htl level but much less expensive.
What to see? Check this out Very Happy

Staying in Yalta you should not miss Sevastopol and other Crimean cities.
As for eating - plenty of cafes located right at Yalta promenade suggesting to taste different cuisines (Ukrainian, Georgian, Armenian etc)
